  • Servings: About 48 servings (1/2 cup each)

Ingredients

3 pounds firm seedless green grapes (about 9 cups), stemmed
3 pounds small hot peppers, such as Fresno, serrano, or small red chiles (about 9 cups)
8 cups distilled white vinegar labeled 5% acidity
4 cups water
3/4 cup granulated sugar
1/4 cup canning or pickling salt
2 tablespoons whole black peppercorns
6 bay leaves (optional)

Directions

Wash your hands, then wash the grapes and peppers under cool running water. Sterilize six clean quart jars because this refrigerator pickle will not receive a canning heat process.
Remove grape stems and discard damaged fruit. Wear gloves for the peppers. Trim long stems and pierce each small whole pepper once or twice with a clean skewer.
Divide the bay leaves and peppercorns among the jars. Add alternating layers of grapes and peppers without crushing them, leaving about 1 inch of room at the top.
Combine the commercial 5% acidity vinegar, water, sugar, and pickling salt in a nonreactive saucepan. Warm just to a simmer, stirring until the sugar and salt dissolve, then cool for 10 to 15 minutes.
Pour the warm brine over the produce, leaving 1/2 inch headspace. Release trapped air with a clean nonmetal utensil and add brine as needed so the produce remains submerged. Discard brine that has touched the produce.
Wipe the rims, apply clean lids, cool no longer than 1 hour, and refrigerate immediately at 40°F or below.
Wait 48 to 72 hours before tasting. Keep the produce submerged and use the pickles within 4 weeks.

Safety notes

REFRIGERATOR PICKLE ONLY — NOT SHELF-STABLE. Do not water-bath can, pressure-can, or store these jars in a pantry. No authoritative tested process was found for this exact grape-and-hot-pepper mixture, six-quart yield, and jar size. Use only commercially manufactured vinegar labeled 5% acidity; do not reduce the vinegar or increase the water. Keep at 40°F or below, keep produce submerged, and use within 4 weeks. Discard without tasting if you see mold, sliminess, leaking, spurting, unexpected bubbling or cloudiness, or detect an off odor.
